Racy and linear in profile, with a lively, tightly meshed bead that carries the rich notes of blackberry coulis, marzipan and candied lemon zest. Chalky finish.

The 2007 Brut Grand Cru Vintage represents an attractive stylistic middle ground in this range, as it is quite open and expressive, with less of the pulsating minerality of the Extra Brut, but also fewer of the oxidative notes found in the Carte d'Or. Green pears, apples, citrus and floral notes flow through to the understated finish. The 2007 impresses for its balance, subtlety and overall sense of harmony. This bottle was disgorged in November 2012. Dosage was 7 grams/liter.

Reviewer, David Schildknecht - Where there are equally tart fruit elements in a dish accompanied by no more than low-level sweetness, this could well prove an interesting match. Saves’ 2007 Brut – representing an 80-20 blend of Pinot and Chardonnay from Bouzy – features exuberantly juicy grapefruit, lime and apple alluringly laced with salt, chalk and liquid honeysuckle perfume. A succulent and mouthwateringly sustained finish incorporates invigorating piquancy of pips and rinds. The bottle I tasted had been disgorged already last November, but I suspect that it would add nutty depth and perhaps other additional interest over the next couple of years.

Soft, round and generous, the 2007 Grand Cru captures the personality of the year in its enveloping, caressing personality. The 2007 is beautifully open today. I don't see it improving materially from here, but it is delicious today and should offer highly rewarding drinking for at least a few years.

Our vineyard have an average lifespan of over 35/40 years and we tend them with great care, respecting the traditions of the Champagne region and protecting the environment. Pest management, natural fertilizers, tillage and maintenance of the soil, the use of endemic predators, careful tying and thinning show how hard we strive to invest our Champagnes with the excellence and unique character of this pretigious "terroir" of origin.
