Stephen Tanzer's IWC
Ruby-red. Potent aromas of bitter cherry, pepper, licorice and tobacco show excellent varietal accuracy. Tangy and vibrant, with strong cherry and cassis flavors complemented by subtle notes of minerals, cured tobacco and spicy oak. A focused, youthfully restrained cabernet that has the concentration and balance to reward cellaring. Offers impressive potential.

Robert Parker, The Wine Advocate
The deep ruby/purple-colored 2004 Cabernet Sauvignon exhibits a restrained, elegant bouquet of black fruits, minerals, and toasty new oak. Medium to full-bodied, with excellent concentration, purity, and texture, it should be consumed over the next 7-10 years. Former winemakers Sarah and Sparky Marquis have left Shirvington and the wine is now being made by Kim Johnston. Little has changed, although the 2004s appear to be more streamlined and delicate than their 2003 and 2002 counterparts.

Winery Notes
Winery Notes:
The wine was 100% barrel fermented and aged for 12 months in 80% American oak and 20% French oak. 85% of the oak was new and the remaining 15% was one year old. This wine is dark ruby red in colour, juicy and aromatic on the nose with hints of leafy and tobacco varietal characters. The palate is instantly rich and mouth filling with ripe cherry and blackcurrant fruit. Well structured with mocha and chocolate flavours and fine emery tannins. White pepper and cloves combine to give a lengthy, spicy finish. It is drinking well now and will cellar for many years.

Sub-Region :
McLaren Vale

One of the most richly varied and highly developed areas in Australia, McLaren Vale produces intensely-flavored, deep red wines and powerful white wines. Due to varying exposure to the cooling influence of the nearby ocean, there is substantial climatic variation in the region. Chapel Hill, Rock Bare and Mitolo are just a few of McLaren Vale’s fine wineries.

Region :
Australia

With the sixth largest wine industry in the world, Australia exports over 100,000,000 gallons a year. Climate conditions vary widely across Australia's many wine regions, creating ideal growing conditions for all of the Vitis vinifera varieties as well as "alternative" varietals like Tempranillo and Viognier, which are gaining popularity. Shiraz (Syrah) is the country's signature grape and the primary ingredient in Australia's most  famous wine Penfolds Grange, which critic Robert Parker compared to Bordeaux's famous Petrus.  Australian winemakers are know for their innovation, pioneering many viticultural techniques that they ritually share with their Northern Hemisphere-brethren during off-season travel.
