In a June, 2009 Hedonist's Gazette article on, Bob Parker himself had this to say about this astounding wine: We finished with a perfect wine, the 1993 Ch√Ęteau Pajzos Esszencia from Hungary. It looked like motor oil, but the wine possessed such great acidity that everything was fresh, vibrant, and well-balanced. Marmalade, a liqueur of nuts, fruitcake, plum, and caramelized tropical fruit characteristics are all present in this deep amber-colored wine. Incredibly intoxicating from an aromatic point of view, this vibrant, well-focused, amazing wine proves the greatness of the finest wines of Tokaji.

Winemaking has been part of Hungarian culture for centuries, but one wine is responsible for putting Hungarian wines on the map: Tokaji, or Tokay. A sweet botrytised wine made from the Furmint grape, Tokaji was the impetus for a royal decree creating the first appellation control, established in 1730.
