A full-blown creme brulee aroma intermingled with scents of caramel and apricots in penetrating. Full-bodied, with viscous, sweet, ripe flavors of tropical fruit and smoked nuts, this big, robust, yet surprisingly mature wine remains fully mature, but displays no signs of declining. Anticipated maturity: Now-2005.

In the Graves region of Bordeaux lays the small wine commune of Sauternes. Here Semillon, Sauvignon Blanc and Muscadelle are allowed to succumb to Botrytis cinerea, the "noble rot" that causes grapes to become partially raisined. The results are concentrated, complex, intense wines that can age for decades. They are often deeply golden and richly sweet, consumed with or in place of desserts and pairing beautifully with foie gras. Chateau d’Yquem is the most famous producer, along with Raymond-Lafon and Rieussec.
